Lion’s Mane “Crab-Style” Cakes

Ingredients

  • 300g Lion’s Mane Mushrooms (shredded)

  • 1 Egg, beaten

  • ¼ cup Mayonnaise

  • ½ cup Panko breadcrumbs

  • 1 tsp Old Bay Seasoning

  • 1 tsp Dijon Mustard

Instructions

  1. Shred: Pull the Lion’s Mane apart into “lump meat” textures.

  2. Mix: Combine egg, mayo, seasoning, mustard, and crumbs in a bowl. Fold in mushrooms.

  3. Chill: Form into patties and refrigerate for 10 minutes to set.

  4. Fry: Pan-fry in butter for 4 minutes per side until a dark golden crust forms.
