Blue Oyster Gourmet Pasta

Ingredients

  • 200g Blue Oyster Mushrooms (sliced)

  • 250g Linguine pasta

  • 3 tbsp Butter

  • ½ cup Heavy Cream

  • ¼ cup Grated Parmesan

  • Fresh Parsley, chopped

Instructions

  1. Pasta: Boil linguine in salted water until al dente. Save ½ cup of pasta water.

  2. Mushrooms: In a large pan, melt butter and sauté Blue Oysters until browned.

  3. Sauce: Reduce heat; add cream and simmer for 2 minutes.

  4. Emulsify: Toss pasta into the pan. Add Parmesan and reserved pasta water, stirring until silky.

  5. Garnish: Top with fresh parsley and black pepper.
